Add mint, sugar and lime / lemon juice into a cocktail shaker and muddle together until sugar is dissolved. Add the rum and the grapefruit juice and ice and shake well until your hand is frozen. Strain into a chilled glass and top up with the soda water and add a dash of bitters.

  • 50ml Scratch Golden or Faithful Rum

  • 10ml lime juice or lemon juice

  • Couple of mint sprigs

  • 1 teaspoon of sugar

  • 150 ml grapefruit juice

  • Soda water to top up

  • Dash of Angostura bitters
